A delicious summer salad for warm days!
The fried basil adds a wonderful crunch to this salad, but you can also simply slice the basil into thin strips and sprinkle it over the top.
Watermelon salad with feta, red onion, mint, fried basil and pickled cucumber
Ingredients
- 1 whole sweet seedless watermelon (preferably from your local Turkish supermarket), cut into 3 x 3 cm cubes
- 10 ml lime juice
- Zest of 1 lime
- 250 g Greek feta, crumbled or cut into cubes
- 2 red onions, thinly sliced into strips
- 30 g fresh mint leaves, cut into thin strips
- 60 g fresh basil leaves
- 2 cucumbers, thinly sliced
- 2 tbsp rice vinegar
- A pinch of salt
- 100 ml olive oil (or use a deep fryer)
Method
- Heat the olive oil in a small saucepan or frying pan to 175°C (or preheat your deep fryer).
- Mix the rice vinegar with a pinch of salt, bring it just to a simmer, then pour it over the sliced cucumber. Leave to cool.
- Toss the watermelon cubes with the lime juice and lime zest and leave to marinate.
- Fry the basil leaves for 5 seconds at 175°C.
- Combine the watermelon, cucumber, red onion and mint. Crumble the feta over the top and finish with the crispy fried basil.
