I would describe the Plantage neighbourhood as: a very peaceful and relaxed hidden gem of Amsterdam. While still being located very central, it is safely guarded by it’s wonderful greenery and also away from all the touristy bustle, so you can enjoy nice strolls through it’s quiet streets, stop for cozy café’s and enjoy the beautiful architecture.
Recipe name: “Gado Gado” cabbage
I chose this recipe because: it reflects very well my vision about Indonesian food. While it packs a whole lot of flavor, we tried to simplify the dish and make it more elegant while still keeping the beautiful flavors of an authentic “Gado Gado”
Ingredients:
For 2 servings:
- hispi cabbage 1pcs
- peanut sauce 1 tablespoon
- white miso 1 teaspoon
- tamarind sauce 1 teaspoon
- butter 100 g
- cream 100 ml
- white wine 100 ml
- Shallots 1 pcs
- Garlic 1 pcs
- crushed peanuts
- cumin powder 1/4 of teaspoon
Method:
- We begin by cutting the cabbage into quarters, season it with salt then steaming it for 15
- minutes. While the cabbage is steaming we can work on our sauce.
- In a saucepan we add a small knob of butter and melt it down. We thinly slice the shallot and
- garlic and add it to the pot. We sweat it off without colouring it, then we add our white wine and
- cook it for about 5 minutes on medium heat. After the wine has reduced by half, we add our
- cream and cook for another 5 minutes. We strain the mixture and discard the shallots and garlic.
- The remaining liquid we transfer it to a new pot to which we add our tamarind and miso paste.
- We blend the sauce with a hand blender and while doing this, we slowly add our butter, in order
- to emulsify the sauce.
- Once the sauce is ready, it can be kept on a warm spot.
- Now that the cabbage is cooked, we glaze it with the peanut sauce and sear it on a very hot pan
- or ideally on the grill. The salted peanuts we simply crush and season with a bit of cumin
- powder.
- To assemble the plate, we start by adding our sauce first, then add the grilled cabbage on which
- we will add our crunchy peanuts.
