On 27 March, Mama Makan will host a truly special culinary evening: an exclusive 6-hands dinner where Italy and Indonesia come together on one menu.
For one night only, three chefs join forces: Antonio Cavoto (Mangia Pizza), Pasquale Carfora (Aroma Restaurant) and Sebastian Sabau (Mama Makan). Together, they present a six-course menu where Italian craftsmanship meets the rich, aromatic flavours of Indonesia.
A unique collaboration
Antonio Cavoto is known for his contemporary Neapolitan style and creative approach to dough and fermentation, subtly inspired by Indonesian flavours.
Pasquale Carfora of the Michelin-starred Aroma Restaurant in Vaassen is internationally recognised for redefining modern Italian cuisine in the Netherlands.
Sebastian Sabau, Executive Chef at Mama Makan, brings deep knowledge of Indonesian spices and regional influences, expressed through refined and contemporary plating.
Together, they create a menu that blends tradition, innovation and culinary storytelling.
On the menu
Expect dishes such as:
– Sea bream tartare with lardo and bottarga
– Contemporary Neapolitan pizza with rendang sauce
– Cacio e Pepe risotto with marinated cod and kaffir
– Satay pizza with marinated chicken
– Slow-braised lamb
– Tiramisu infused with Indonesian liqueur
The evening concludes with delicate petit fours.
